Taking Farm to Table Dining to a Whole New Level

The Snowbasin Resort Culinary Team spent the morning gathering ingredients at Sandhill Farms in Eden to use for this Sunday's Mountain Top Brunch. Farm to table dining is a very popular concept, based in the idea that the longer the amount of time between harvest and fork, the more quality, flavor and nutrients that are lost. But this takes it to a whole new level. It is not often the chefs who will be preparing your food also picked them straight from the ground just a few minutes from the kitchen.

While the chefs aren't usually the ones gathering the vegetables from the field, fresh, local ingredients are always incorporated into dishes at Snowbasin Resort. The menu for the weekly Mountain Top Brunch is determined each week based on the ingredients they recieve in their CSA (community supported agriculture) boxes from local farms such as Borski Farms and Sandhill Farm. The annual Farm to Table Culinary Expedition uses all local ingredients in each of the 5 courses as well as showcasing local wine and beer. This year's event is on September 23, make your reservations now as this event always sells out early!
